Savory Waffles with Salsa

Sometimes you just need a break from the same old sugary breakfast. Something savory, perhaps. These savory waffles are super easy and quick, and taste like party in your mouth. And it’s totally acceptable to eat them for breakfast, lunch, or dinner. OR you could do what I did and wait until 2 o’clock to make them and then plop down on the couch with the plate and slowly eat the entire batch while watching Joe Girardi get thrown out of the Yankees game.

Top these waffles with salsa, an egg, or use the waffles as bread for a sandwich. Awesome. I promise.

Savory Waffles


(serves 2)

1 1/4 cup all-purpose flour

1/4 cup cornmeal (fine cornmeal is good, but I love a coarse grind for this recipe)

1 1/2 teaspoons baking powder

1/2 teaspoon baking soda

1 teaspoon granulated sugar

1/2 teaspoon salt

1/2 teaspoon coarse ground black pepper

1/3 cup melted unsalted butter

2 large eggs

1 1/4 cup buttermilk

3 tablespoons chopped chives

2 tablespoons chopped parsley

3 tablespoons chopped bacon

3 tablespoons shredded cheddar cheese


Preheat your waffle iron.

In a large bowl, whisk together flour, cornmeal, baking powder, sugar, baking soda, pepper,  and salt.

In a medium bowl, whisk together eggs, butter, and buttermilk.  Add the wet ingredients, all at once to the dry ingredients. Stir until incorporated. Add in the the chives, parsley, bacon, and cheese. Try not to over-mix the batter.  If a few lumps remain in the batter, that’s ok.

Cook according to your waffle machine instructions.

*You can put the waffles in a plastic bag and freeze and reheat in the toaster in the morning.
