Peanut Butter and Jelly Cookies

Let me just say, these cookies are yummy. YUMMY. It gives a fun, childhood favorite a new twist. Pack them in your kid’s lunch, save them for snacktime, or eat them late at night when nobody else is awake to judge you for eating cookies, because let’s face it, they’re just jealous of your body and will look for any excuse to put you down…. right?

PB&J Cookies


1/2 cup chunky or smooth peanut butter

1/4 cup brown sugar

1/4 cup granulated white sugar

1 small egg

1/2 teaspoon baking soda

1/4 cup jam or jelly of your choosing


Preheat your oven to 350*F. Line a cookie sheet with parchment paper, and set aside.

In a mixer, combine the peanut butter and both sugars until well combined, about two minutes. Add the egg and baking soda and mix for an additional two minutes.

Roll the dough into walnut-sized balls and place on cookie sheet. Then, with your thumb or the back of a small measuring spoon, press a small well into each of the cookies. Fill each well with your jelly or jam. Bake for about 10 minutes, or until lightly golden. Then eat immediately.
