Pineapple and Banana Flambe

28 Jun

The word flambe often intimidates people, because it carries with it a sense of gourmet and upscale. In reality, however, it’s nothing more than stirring, sauteeing and lighting on fire. The tropical flavors of this dessert are highlighted by the caramel-like sauce that spills over it. This pineapple and banana flambe dessert is quick and easy to prepare, as well as delicious!

Pour this dessert over ice cream or, if you’re feeling adventurous, waffles!

Pineapple and Banana Flambe

Ingredients: (Serves 8)

  • 1 pineapple, cut into 1-inch pieces
  • 4 bananas, cut into 1-2 inch pieces
  • 4 tablespoons of butter
  • 1 cup of brown sugar, packed
  • 1/4 cup of Cointreau, or some other orange liquer
  • 1/4 cup of dark rum

In a large skillet, melt the butter. Stir in the brown sugar and continue stirring until melted and smooth. Add in the pineapple chunks and cook until heated through. Stir in the Cointreau. Then, add in the banana chunks and cook until heated through.

In a small saucepan, quickly heat the rum. If you wait too long, the alcohol will evaporate and it won’t ignite. Once hot, ignite the rum and quickly pour over the pineapple and banana mixture. Shake the pan until the flames die out. Serve immediately over ice cream.
