S’mores Cupcakes

I know, I know. But I just had to. It’s nearing the end of summer, when the warm, humid nights turn to cool, breezy ones. We sit around bonfires in our sweatshirts and eat s’mores. But what if you could have the s’more without starting a fire, waiting until night, or wearing a sweatshirt? Now you can. This cupcake is…. Delicious! A simple, chocolatey cake, frosted with homemade marshmallow, and topped with a graham cracker. This is what summer is all about.

S’mores Cupcakes

Ingredients: (yields 12)

  • 1 cup all-purpose flour
  • 1/4 teaspoon baking soda
  • 1 1/2 teaspoons baking powder
  • 1/2 cup unsweetened cocoa powder
  • pinch of salt
  • 3 tablespoons butter, softened
  • 1 cup granulated sugar
  • 2 eggs
  • 1/2 teaspoon vanilla extract
  • 1/2 cup milk

 

  • 1 1/4 cups granulated sugar
  • 4 egg whites
  • 1-2 teaspoons vanilla extract (optional)
  • graham crackers

Directions:

  1. Preheat oven to 350 degrees F (175 degrees C). Line a muffin pan with paper or foil liners. Sift together the flour, baking powder, baking soda, cocoa and salt. Set aside.
  2. In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well with each addition, then stir in the vanilla. Add the flour mixture alternately with the milk; beat well. Fill the muffin cups 3/4 full.
  3. Bake for 15 to 17 minutes in the preheated oven, or until a toothpick inserted into the cake comes out clean. Frost with your favorite frosting when cool.
  4. To Make the Frosting: combine the egg whites and sugar in the top of a double boiler. Whisk constantly for five minutes over medium-high heat. When the mixture reaches 160*F, about 5 minutes.
  5. Transfer the egg mixture to the bowl of a stand mixer. Add your desired amount of vanilla. Beat on high for 6 minutes, at which point, the mixture should be room temperature.
  6. Pipe the marshmallow onto the cupcakes. Then, place the cupcakes on a baking sheet and put under the flame of the broiler for 2-3 minutes, or until the tops of the marshmallows are browned. Top with a graham cracker, and enjoy!!
